Chocolate Raspberry Pie
This Chocolate Raspberry Pie is the must have dessert at holidays. It’s a labor of love but people just love it!!
Ingredients
- 1 9 in Unbaked Pie Crust
- 3 tbsp Sugar
- 1 tbsp Cornstarch
Filling
- 1 pckge Cream Cheese, softened 8 oz
- 1/3 cup Sugar
- 1/2 tsp Vanilla
- 1/2 cup Whipping Cream (Whipped in Mixer)
Topping
- 2 1 oz Semisweet Chocolate Sqaure
- 3 tbsp Butter
- 2 cups Unsweetened Raspberries Fresh or Frozen
Instructions

Line pricked pie shell with double thickness heavy duty foil.

Bake at 450 for 8 minutes.

Remove foil; bake 5 minutes longer. Cool on wire rack.

In a sauce pan, combine sugar, and cornstarch.

Stir in raspberries, bring to a boil over medium heat. Boil two minutes while stirring.

Remove from heat; cool for 15 minutes then spread into pie shell, place in fridge to cool.

In a mixing bowl, beat cream cheese, sugar, vanilla until fluffy. Fold in the whipped cream. Carefully spread over raspberry layer.

Cover and refrigerate for at least one hour.
Melt chocolate and butter; cool for 4-5 minutes and pour over pie.

Chill for at least two hours, always store in fridge.
