WEEK NIGHT MEAT NIGHT RECIPES
If you have multiple children and are always on the run with sports, or band or whatever your active child or family is doing this section is here to assist you to prepare for always being on the go!
One week is ground meat week; for instance, we do buffalo, hamburger, turkey or chicken. I get at least 5lbs but you might want more depending on your family size. On Sunday or Monday night I fried all this meat up (you might save some to make a meatloaf or burgers, see below) and then this is what we have:
Monday: Taco Night
1 lb cooked ground meat
2 cups chopped lettuce
1 cup chopped tomatoes
¼ cup chopped onions
1 cup shredded cheese of your liking
Sour Cream
Taco Sauce
Warm Tortillas (I take four place them between two wet paper towels and cook in the microwave one minute.) Load up your tortilla and eat!
Tuesday Night: Spaghetti Night
I add one chopped onion and one can green chilis and one tablespoon of chopped garlic to a stove top frying paying, add a drop of olive oil. Sautéed until onions are almost transparent. Take cooked ground meat and add it to this mixture just long enough to mix well. Now add your spaghetti sauce, homemade or Ragu or Organic sauce whatever you prefer add to this meat mixture and simmer.
In the meantime, cook noodles in boiling water. Once the noodles are done, get a crock pot, spray the bottom and sides add your drained noodles and then add sauce/meat mixture on top. You can mix or leave like that, place crockpot on low and let cook all day. You may have to add more sauce because some noodles will soak up the sauce. This is delicious!
When it is dinner time, I take a stick of butter place in a bowl, add a couple tablespoons of minced garlic mix until soft and creamy. Take some old bread, cut in wedges, spread butter mixture and pop in the oven for about 10mins on 350 degrees.
Add some parmesan cheese to the spaghetti and you are set!
Wednesday Night: Sloppy Joes or Cheeseburger Wraps
Sloppy Joes: Take about 1lb of the cooked ground meat and place in a frying pan to warm up. Add ketchup and mustard (or Manwich sauce). I add more ketchup to make it saucy and then add just enough mustard for taste. Get some buns and pile on the sloppy joe. Kids and hubbies love this. Add a salad or veggies or chips!
Cheeseburger Wraps: take your extra tortillas warm them up, add mayonnaise or ranch after you have warmed the tortillas up add warm ground meat tomatoes, lettuces, cheese and pickles if you like. Roll up like a burrito and slice in half!
Thursday Night: Enchiladas Night
One of my favorite dishes! Take your burritos fill with shredded cheese and ground meat rolled up tightly, I place about eight in a casserole dish. Then I add taco sauce and then cover it with grated cheese. Cook on 350 for 30 minutes until cheese is golden. I make rice to serve with it.
Sometimes, I make a meatloaf (you have to use raw meat so save some before you fry it all)
Meatloaf:
1lbs ground raw meat
1 cup shredded cheese
Handful of chips or saltine crackers
5 dashed of Worcestershire Sauce (or as much as you like)
Salt and Pepper
Garlic Powder dash
Onion Powder a couple dashes
One egg
Mix all together in a bowl, place in a loaf pan and bake for about 50 mins to an hour on 350.
You can also save some meat and just make hamburgers or turkey burgers.
But here you have a weeks’ worth of dinner with no stress. One thing I always have on hand is ground meat, cheese, sauce and tortillas.
