Linda’s Cheeseburger Soup

A delicious hearty soup to feed a crowd

  • 1 1/2 cups chopped onion
  • 2 cups shredded carrots
  • 1 cup chopped celery
  • 2 tsp basil flakes
  • 2 tsp parsley flakes
  • 1 1/2 sticks butter, divided
  • 1 lb ground beef, cooked and drained
  • 6-8 cups chicken broth
  • 8 cups diced potatoes (peeled)
  • 1/2 cup flour
  • 16 oz velveeta cheese
  • 3 cups milk
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2/ cup sour cream


  1. Sauté first five ingredients with ¼ cup butter for 10 minutes. Add broth, potatoes and ground beef. Bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are done. Meanwhile, in a small pan add the remaining butter, add flour and cook and stir until bubbly 3-5 mins. Add to soup mixture and bring to a boil for 2 minutes. Reduce heat to low, add cheese, milk, salt and pepper. Cook and stir until cheese is melted. Add sour cream when ready to eat.
